Ingredients
1 can jackfruit, drained & rinsed
⅔ cup walnuts
1 tbs Fresh parsley, roughly chopped
¼ cup Red onion, diced finely
¼ cup chickpea flour
⅛ tsp garlic powder
Black pepper to taste
½ tsp sea salt
1 tsp thyme
1 tsp ground sage
¼ tsp ground fennel
1 tbs avocado oil
Chickpea egg:
½ cup Chickpea flour
½ cup spring water
¼ tsp ground tumeric
Pink Himalayan salt to taste
Black pepper to taste
1 tbs Red bell pepper, diced
1 tbs green bell pepper, diced
1 tbs Red onion, diced
Shredded vegan cheddar cheese
1 tbs avocado oil
Directions
Step 1
Rinse the jackfruit and boil it in water for 20 mins.
Step 2
Then add jackfruit to a blender with walnuts, parsley, red onions, chickpea flour, salt, black pepper, Garlic powder, thyme, sage & fennel seeds. Pulse a couple times. Add avocado oil the pulse a couple more times. Form into patties in the size of your choosing. Cook in oil on medium high until golden brown on eachside.

Step 3
Make your chickpea egg mix by adding all ingredients into a bowl and mix thoroughly. Add oil to a non stick pan on medium heat. Pour in your chickpea egg mix and cook for 3-4 mins eachside. Melt some Vegan cheese on top once it's close to being done.

Assemble your sandwiches with vegan bread, chickpea egg and jackfruit sausage. Drizzle with maple syrup and enjoy!
